The University of Hawaiʻi at Hilo College of Continuing Education and Community Service (CCECS) is accepting applications for enrollment in the Master Food Preserver Certificate Program. Classes will be held February 10, 11, 12, 17, 18, 19, 25, and 26 from 1 – 7 p.m. at “The Kitchen” at 615 Haihai Street in Hilo. The cost is $200 and includes a text book, cookbooks, kitchen use and all canning jars and food supplies.
Individuals interested in developing their own jams and jellies, canning acid foods, pressure canning low acid foods, pickling and fermenting, drying, freezing, and the art of charcuterie are encouraged to become certified Hawai‘i Master Food Preservers.
Kaua`i-born instructor Kalen Kelekoma is a certified Master Food Preserver who has taught children and adults on Kaua`i and O`ahu. Kelekoma is the Special Projects Manager with the Waipa Foundation and runs the weekly Waipa Farmers Market. He also coordinates Poi Day, festivals, workshops and other events for the Foundation.
